This naturally processed Ethiopia is practically the perfect espresso coffee. It has strong Ethiopian descriptors, as well as high sweetness and balanced acidity that is not too high. This coffee goes perfectly with milk, and in cappuccino it gives the taste of berry yogurt with chocolate notes.
What makes this coffee so balanced and bright is the natural processing. The coffee comes from small farmers to renowned processing stations owned by the company Siz Agro, which specializes in specialty coffee. At processing stations, the berries are laid out on African beds - special mesh flooring raised above the ground. The coffee is dried in the sun, turning regularly, and during the drying process the sugars from the pulp and gluten remain on the surface of the beans. This is one of the reasons why naturally processed coffee is sweeter than washed coffee.
But the main difference of this variety is its bright, complex and stable taste, despite the 3rd grade. In Ethiopia, coffee is sorted into grades based on the number of defects, particularly Quakers. Quakers are unripe berries with underdeveloped grains, the chemical composition of which is not fully formed. Because of this, Maillard and caramelization reactions do not occur in Quakers, the prepared coffee acquires the taste of cellulose, the aroma becomes flat, and the beans themselves become lighter than the bulk of the coffee.
In Ethiopia, the berries are usually sorted by hand, so grade 1 coffee (without defects) is 2-3 times more expensive than grade 3 coffee. At the same time, the peculiarity of this lot is that it comes from well-known processing stations, where all processes are debugged - the coffee is dried correctly, over-fermentation and the appearance of defects are not allowed. As a result, the initial flavor potential of this coffee is high, and the presence of Quakers is the main difference between the grades. Accordingly, if you remove Quakers, the coffee score will increase by several points at once.
You can clear Quakers from coffee only after roasting, by sorting the beans by color. A color sorter is installed in our production - this is a device that determines color deviations and removes defective grains using compressed air with high accuracy. The result is bright and consistent coffee at a very good price.
